For the Fritters: 2 medium zucchinis, grated 1/2 cup gluten-free flour 2 tablespoons olive oil 1/2 teaspoon sea salt 1/4 teaspoon black pepper For the Marinated Cucumber Salad: 1 large cucumber, thinly sliced 1/4 cup white wine vinegar 1 tablespoon olive oil 1 teaspoon maple syrup 1 clove garlic, minced 1/4 teaspoon sea salt 1/4 teaspoon black pepper
Directions: 1. Preheat oven to 375°F. Line a baking sheet with parchment paper or non-stick foil. 2. In a medium bowl, combine the grated zucchini, flour, olive oil, salt, and pepper. Mix until well combined. 3. Using a tablespoon or two, scoop up a ball of the mixture and pat it into a flat patty shape. Place the fritter onto the baking sheet. Repeat with the remaining mixture. 4. Bake for 20 minutes, flipping over halfway through. 5. While the fritters are baking, combine the cucumber slices, vinegar, olive oil, maple syrup, garlic, salt and pepper in a medium bowl. Mix together until well combined. 6.
