Zucchini Fritters with Marinated Cucumber Salad

Being gluten free means avoiding foods that contain the proteins gluten and gliadin. Gluten is found in most wheat, barley and rye-based products. Common gluten containing foods include breads, pastas, cereals, baked goods, and anything made with wheat, barley or rye. Individuals shunning gluten are often found to have Celiac Disease, an autoimmune disorder in which the body cannot break down gluten and it causes inflammation in the intestinal tract. Gluten free diets are comprised of naturally gluten free foods, including fruits, vegetables, grains, beans, dairy products, legumes, potatoes, poultry, seafood and eggs. Health benefits of being gluten free include better digestion, improved energy levels, decreased risk of developing certain diseases and improved overall health. Additionally, those embarking on a gluten free eating plan may find their taste buds “reset” and naturally crave less processed, healthier foods.

Ingredients


For the Fritters: 2 medium zucchinis, grated 1/2 cup gluten-free flour 2 tablespoons olive oil 1/2 teaspoon sea salt 1/4 teaspoon black pepper For the Marinated Cucumber Salad: 1 large cucumber, thinly sliced 1/4 cup white wine vinegar 1 tablespoon olive oil 1 teaspoon maple syrup 1 clove garlic, minced 1/4 teaspoon sea salt 1/4 teaspoon black pepper

Instructions


Directions: 1. Preheat oven to 375°F. Line a baking sheet with parchment paper or non-stick foil. 2. In a medium bowl, combine the grated zucchini, flour, olive oil, salt, and pepper. Mix until well combined. 3. Using a tablespoon or two, scoop up a ball of the mixture and pat it into a flat patty shape. Place the fritter onto the baking sheet. Repeat with the remaining mixture. 4. Bake for 20 minutes, flipping over halfway through. 5. While the fritters are baking, combine the cucumber slices, vinegar, olive oil, maple syrup, garlic, salt and pepper in a medium bowl. Mix together until well combined. 6. Serve the fritters with a side of the marinated cucumber salad. Enjoy!
