Ingredients
-1 cup cooked quinoa -1 block firm tofu, drained -1 teaspoon olive oil -2 tablespoons chili powder -1 teaspoon ground cumin -1 garlic clove, minced -1/2 teaspoon sea salt -1 cup corn meal -1/2 cup diced green chilies -1/4 cup diced onion -2 tablespoons fresh cilantro, chopped -3 tablespoons olive oil -1/4 cup salsa -4 whole wheat buns
Instructions
1. Mash the tofu with a potato masher until it resembles crumbled hamburger. Place tofu in a bowl and set aside. 2. Heat the olive oil in a medium skillet over medium heat. Add the chili powder, cumin, garlic, and sea salt and sauté for 1-2 minutes. 3. Add the cooked quinoa and mix until everything is evenly coated. Add the corn meal and stir everything together. 4. Add the green chilies, onion, cilantro and mix until everything is evenly distributed. 5. Form the quinoa mixture into 4 patties. Heat the olive oil in a large skillet over medium-high heat. Place the patties in the pan and cook for 3-4 minutes per side, until cooked through and lightly browned. 6. Toast the buns and top each with a patty, salsa and any additional desired toppings. Serve and enjoy!
