– 1 lb ground turkey – 1 tablespoon olive oil – 1 package gluten-free taco seasoning – 2 cloves garlic, minced – 2 Roma tomatoes, diced – 2 avocados, diced – 1/4 cup diced red onion – 1/4 cup fresh cilantro, chopped – Juice from 1/2 lime – Salt and pepper, to taste – 1 head iceberg lettuce, leaves separated
1. Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey and cook until it’s no longer pink, breaking the meat up into small crumbles. 2. Stir in the taco seasoning and minced garlic, and cook for an additional five minutes. 3. Remove the skillet from the heat and stir in the tomatoes, avocados, red onion, cilantro, lime juice, salt and pepper. 4. Divide the mixture evenly among the lettuce leaves and serve.
