Ingredients




– 2 tablespoons olive oil

– 1 medium onion, chopped

– 2 cloves garlic, minced

– 1 red bell pepper, chopped

– 1 jalapeno, seeded and chopped

– 2 sweet potatoes, peeled and chopped into 1/2-inch cubes

– 1 teaspoon chili powder

– 1 teaspoon smoked paprika

– 1/2 teaspoon cumin

– 1/2 teaspoon oregano

– 1/2 teaspoon salt

– 1 can black beans, rinsed and drained

– 1/4 cup frozen corn

– 1/4 cup salsa

– 2 tablespoons chopped cilantro

Instructions

1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook for 2 minutes.

2. Add the bell pepper and jalapeno and cook for 2 minutes.

3. Add the sweet potatoes and cook for 7-10 minutes, stirring occasionally, until the potatoes are tender.

4. Add the chili powder, smoked paprika, cumin, oregano, and salt and stir until everything is evenly coated.

5. Add the black beans, corn, and salsa and stir until everything is combined.

6. Reduce the heat to low and cook for 5-10 minutes, stirring occasionally, until everything is heated through.

7. Serve with a sprinkle of cilantro.
