– 2 tablespoons avocado oil – 1 pound Italian sausage, removed from casing and crumbled – 2 cloves garlic, minced – 1 large onion, diced – 8 ounces mushrooms, sliced – 2 cups cooked brown rice – 2 cups chicken stock – 1 teaspoon dried oregano – 1 teaspoon dried thyme – 1 teaspoon Kosher salt – 1/2 teaspoon freshly ground pepper – 2 tablespoons freshly minced parsley
1. Heat the avocado oil in a large skillet or dutch oven over medium-high heat. 2. Add the sausage and cook until browned, stirring occasionally. 3. Add the garlic and onion and cook until softened, about 5 minutes. 4. Add the mushrooms and cook until lightly browned, about 5 minutes. 5. Add the cooked rice, chicken stock, oregano, thyme, salt, and pepper. Stir and bring to a boil. 6. Reduce the heat to low, cover and simmer until the rice is tender, about 20 minutes. 7. Finally, stir in the parsley and serve. Enjoy!
