Roasted Maple Salmon with Creamy Sweet Potato Mash

Ingredients


• 4 salmon fillets (4-6 ounces each) • 2 tablespoons olive oil • 2 tablespoons pure maple syrup • Sea salt and freshly cracked black pepper • 2 tablespoons butter or ghee • 2 tablespoons freshly squeezed lemon juice For the mashed sweet potatoes: • 2 cups cooked and mashed sweet potatoes • 2 tablespoons butter or ghee • 1 tablespoon freshly squeezed lemon juice • Sea salt and freshly cracked black pepper

Instructions


1. Preheat the oven to 375F. Line a rimmed baking sheet with parchment paper or a silicone baking mat. 2. Place the salmon fillets on the prepared baking sheet. Drizzle with the olive oil and maple syrup, then season with sea salt and freshly cracked black pepper. 3. Bake the salmon for 15-18 minutes, until it is cooked through and flaky. 4. Meanwhile, prepare the mashed sweet potatoes. Place the cooked sweet potatoes in a medium bowl and mash them until they are creamy. 5. Add the butter or ghee and lemon juice to the mashed sweet potatoes, then season with salt and pepper to taste. 6. To serve, place the salmon on a plate next to the mashed sweet potatoes, and enjoy.
