Lemon Salmon with Asparagus

Being gluten free means avoiding foods that contain gluten, such as grains like wheat, barley, and rye. Eating gluten free means finding other alternatives to wheat, such as quinoa, corn, rice, oats (depending on personal intolerance), and other types of grains. Fruits and vegetables, most dairy products, meat, eggs, and fish are all safe to consume when gluten free. The main health benefit of going gluten free is that it can help us to absorb nutrients from the food we eat, as well as benefitting anyone with a gluten intolerance. There is also some research to suggest going gluten free may improve our digestive system and reduce bloating.

Ingredients


– 4 6-ounce salmon filets – 2 tablespoons olive oil – 2 tablespoons freshly squeezed lemon juice – Salt and freshly ground black pepper to taste – 1 pound asparagus, trimmed – 2 tablespoons butter

Instructions


1. Heat oven to 375 degrees F. 2. Place salmon on a lightly greased baking sheet. 3. Drizzle with the olive oil and lemon juice. Sprinkle with salt and pepper to taste. 4. Arrange asparagus spears around the salmon. Dot with butter and season with salt and pepper to taste. 5. Bake for 15 minutes, or until the salmon is cooked through and the asparagus is tender. 6. Serve hot. Enjoy!
