Super Delicious & Gluten-Free Meal Guide, Recipe Post #975: Grilled Salmon with Pesto Zucchini and Tomato Rice

Being gluten free means that I do not include gluten in my diet. Gluten is found in wheat, barley and rye and these ingredients are often found in breads, pastas, baked goods and even condiments. It ucan be hard to avoid wheat, barley and rye, but if I choose to do so I can opt for products and ingredients that are naturally gluten free, such as fresh fruits and veggies, nuts, beans, dairy, eggs, unprocessed lean meats, poultry and fish. When I’m eating out, I can look for dishes that use corn, rice, quinoa and buckwheat as alternatives to the common wheat-based ingredients. The health benefits of eating a gluten free diet can be significant. I may have improved digestion and increased energy when I cut out gluten and opt instead for more fruits and vegetables, lean proteins, and healthy fats. Also, many gluten free products are fortified with vitamins and minerals, so I’m getting a nutrient-dense diet to keep me feeling my best.

Ingredients


– 2 salmon fillets – 1 large zucchini cut into thin, ½ inch slices – 2 cloves garlic, thinly sliced – 1 tablespoon pesto – 2 tablespoons olive oil – 2 tablespoons fresh oregano, chopped – 2 tablespoons white balsamic vinegar – Salt and pepper – 2 tomatoes, diced – ½ cup cooked jasmine rice – ½ cup fresh basil, chopped

Instructions


1. Preheat grill to medium-high heat. 2. Brush the salmon and zucchini slices with olive oil and season with salt and pepper. Grill the salmon for 4-5 minutes per side and the zucchini for 2-3 minutes per side. 3. While the salmon and zucchini are grilling, combine the garlic, pesto, oregano, and balsamic vinegar and mix together to form a paste. 4. Once the salmon and zucchini are cooked, top the salmon with the pesto mix and set aside. 5. In a medium bowl, combine the cooked jasmine rice, chopped tomatoes, and basil and mix together. 6. Serve the grilled salmon with the zucchini and the pesto tomato rice. Enjoy!
