Ingredients


– 2 salmon fillets – 1 peach, diced – 1/2 sweet bell pepper, diced – 1/4 cup diced red onion – 2 tablespoons chopped fresh cilantro – 2 tablespoons extra-virgin olive oil – 1 tablespoon freshly squeezed lime juice – Salt and freshly ground pepper, to taste – Fresh cilantro sprigs, for garnish

Instructions


1. Preheat a grill or grill pan over medium heat. Brush the salmon fillets with olive oil, and sprinkle with salt and pepper. 2. Place the salmon on the preheated grill and cook for 4 to 5 minutes on each side, or until cooked through. 3. Meanwhile, in a small bowl combine the diced peach, bell pepper, red onion, chopped cilantro, olive oil, and lime juice. Season with salt and pepper, to taste. 4. To serve, divide the grilled salmon between two plates and top with the peach salsa. Garnish with fresh cilantro sprigs. Enjoy!
