Ingredients
2 large eggplants 1/2 cup fresh basil, shredded 1 cup feta cheese, crumbled 1/4 cup extra virgin olive oil Sea salt and black pepper
Instructions
1. Preheat the oven to 400°F. 2. Slice the eggplant into 1/2 inch thick slices. Place the eggplant slices on a baking sheet lined with parchment paper. 3. Drizzle each eggplant slice with a teaspoon of olive oil and season with sea salt and black pepper. 4. Bake in the oven for 15 minutes until the eggplant slices are lightly golden in color. 5. While the eggplant is baking, shred the basil and crumble the feta cheese. 6. When the eggplant slices are finished baking, take the baking sheet out of the oven and assemble the packets. Place one slice of eggplant on a piece of baking parchment. Top with 1 tablespoon of basil and 1 tablespoon of feta cheese. Place another eggplant slice to top off the packet and drizzle with a teaspoon of olive oil. 7.
