Being gluten free can mean a lot of things, but it basically means that you don’t consume any foods containing gluten, which includes wheat, rye, and barley. Gluten-free foods include anything that does not contain these grains, such as quinoa, vegetables, fresh fruit, fish, nuts, legumes, and eggs. Eating gluten free can have many health benefits, such as being able to avoid digestive distress, eliminating inflammation, supporting a healthier brain function, and providing many essential vitamins and minerals. For me, being able to eat gluten free is about feeling good and living a healthier lifestyle. Even though I have to be careful about what I eat, I’ve found that being gluten free has opened up a whole new world of delicious food choices that I never knew were available to me. Plus, I don’t have as much stomach pain or bloating after meals, and I have more energy during the day. It’s a great and rewarding feeling to have!

Ingredients
-2-3 boneless skinless chicken breasts
-2 tablespoons olive oil
-2 cloves garlic, minced
-2 limes, juiced
-2 tablespoons freshly chopped cilantro
-salt and pepper to taste
-2-3 sweet potatoes, peeled and cubed
-2 tablespoons olive oil
-1 teaspoon chili powder
-1 teaspoon paprika
-salt and pepper
Instructions
1. Begin by preheating your oven to 375°F.
2. In a bowl, combine the olive oil, garlic, lime juice, and cilantro for the marinade. Pour the marinade over the chicken and allow to marinate while you prepare the sweet potatoes.
3. In a separate bowl, combine the olive oil, chili powder, paprika, and a generous pinch of salt and pepper.
4. Add the cubed sweet potatoes to the bowl and use your hands to coat the sweet potatoes evenly with the spice mixture.
5. Spread the sweet potatoes out on a baking sheet and roast in the preheated oven for about 25-30 minutes or until golden and tender.
6. Remove from the oven and set aside.
7. Heat a large skillet over medium-high heat and add the marinated chicken breasts. Cook for about 6-8 minutes on each side or until fully cooked through.
8. Once cooked through, remove from the heat and serve alongside the roasted sweet potatoes. Enjoy!
