Try this as your next healthier meal option to serve up for you and your loved ones:
Ingredients – 2 boneless, skinless chicken breasts, cut into 1” cubes – 2 tablespoons extra-virgin olive oil – 1 teaspoon chili powder – ½ teaspoon garlic powder – Salt and freshly cracked black pepper – 1 large fresh pineapple, peeled, cored and cut into 1/2-inch cubes – 1 large cucumber, peeled, seeded and diced – ¼ cup finely chopped red onion – 2 tablespoons finely chopped cilantro – 1 tablespoon freshly squeezed lime juice – 2 tablespoons extra-virgin olive oil – Pinch sea salt
Instructions 1. Preheat an outdoor grill or indoor grill pan to medium-high heat. 2. In a large bowl, combine the chicken cubes, olive oil, chili powder, garlic powder and season with salt and pepper to taste. Mix until evenly coated. 3. Thread the chicken cubes onto 8–10 evenly sized skewers. 4. Grill the chicken for about 4–5 minutes per side, or until cooked through. 5. Meanwhile, in a medium bowl, combine pineapple, cucumber, red onion, cilantro, lime juice, olive oil and sea salt. Mix until combined. 6. Serve the grilled chicken skewers topped with pineapple-cucumber salsa. Enjoy!
