Ingredients
• 2 large chicken breasts, cut into cubes
• 2 tablespoons olive oil
• Salt and pepper to taste
• 1-2 cups Greek couscous
• 1/2 cup crumbled feta cheese
• 1/2 cup sliced black olives
• 1/2 cup diced tomatoes
• 1/4 cup diced red onions
• 2 tablespoons chopped fresh oregano
• 2 tablespoons freshly squeezed lemon juice
• 2 tablespoons olive oil
Instructions
1. Preheat an outdoor grill or indoor grill pan to medium-high heat.
2. In a small bowl, combine the olive oil and salt and pepper.
3. Place the cubed chicken pieces onto four skewers.
4. Coat the chicken on all sides with the olive oil mixture.
5. Place the chicken skewers on the preheated grill. Cook for 8-10 minutes or until the chicken is cooked through.
6. In a medium saucepan, heat the couscous according to package instructions.
7. Add the feta cheese, olives, tomatoes, red onions, oregano, lemon juice, and olive oil to the couscous and mix everything together.
8. Serve the chicken skewers with the Greek couscous on the side.
