Eating gluten free can seem daunting, but I promise it doesn’t have to be! To be gluten free simply means to avoid all food and drinks containing the protein gluten. But don’t worry, there are plenty of delicious, healthy alternatives! Many naturally gluten free foods include fruits, vegetables, beans, nuts, dairy, eggs, and all types of meat. For instance, quinoa, lentils, and brown rice make great alternatives to your standard white breads and pastas. Eating gluten free can also have plenty of health benefits such as improved digestion, reduced inflammation, more energy, and a balanced weight. It’s also important to note that gluten free does not mean low in calories – follow a balanced diet and consult a doctor or nutritionist to make sure you’re getting the nutrition you need.

Try this as your next healthier meal option to serve up for you and your loved ones:

Grilled Kebab over Cooked Veggies


• 2 large chicken breasts, cut into cubes
• 2 tablespoons olive oil
• Salt and pepper to taste
• 1-2 cups Greek couscous
• 1/2 cup crumbled feta cheese
• 1/2 cup sliced black olives
• 1/2 cup diced tomatoes
• 1/4 cup diced red onions
• 2 tablespoons chopped fresh oregano
• 2 tablespoons freshly squeezed lemon juice
• 2 tablespoons olive oil


1. Preheat an outdoor grill or indoor grill pan to medium-high heat.

2. In a small bowl, combine the olive oil and salt and pepper.

3. Place the cubed chicken pieces onto four skewers.

4. Coat the chicken on all sides with the olive oil mixture.

5. Place the chicken skewers on the preheated grill. Cook for 8-10 minutes or until the chicken is cooked through.

6. In a medium saucepan, heat the couscous according to package instructions.

7. Add the feta cheese, olives, tomatoes, red onions, oregano, lemon juice, and olive oil to the couscous and mix everything together.

8. Serve the chicken skewers with the Greek couscous on the side.
