Ingredients


– 4 boneless, skinless chicken breasts – 2 tbsp olive oil – 4 cups of fresh baby spinach – 1/2 cup quartered cherry tomatoes – 1 avocado, sliced – 1/2 cup cooked asparagus – 1 shallot, thinly sliced – 2 tbsp red wine vinegar – 2 tsp Dijon mustard – 2 tablespoons freshly chopped parsley – 2 tablespoons freshly chopped chives – 2 tablespoons freshly squeezed lemon juice – Salt and pepper

Instructions


1. Preheat your grill to medium-high heat. 2. Rub the chicken breasts with the olive oil and season with salt and pepper. 3. Grill the chicken for about 8 minutes, flipping halfway through, until cooked through. 4. Let the chicken cool and slice or shred it into smaller pieces. 5. In a large bowl, combine the spinach, tomatoes, avocado, asparagus, and shallot. 6. In a small bowl, whisk together the vinegar, mustard, parsley, chives, and lemon juice. 7. Drizzle the salad with the vinaigrette and season with salt and pepper. 8. Add the chicken and toss to combine. 9. Serve chilled or at room temperature.
