Ingredients
• 1 lb. boneless, skinless chicken breasts, cut into cubes
• 1/2 large pineapple, cut into cubes
• 2-3 large sweet potatoes, cut into cubes
• 1/4 cup olive oil
• 1 tsp. smoked paprika
• 1/2 tsp. garlic powder
• 1/2 tsp. onion powder
• 1/4 tsp. chili powder
• Salt and pepper to taste
Instructions
1. Preheat the oven to 400 degrees.
2. In a large bowl, combine the chicken, pineapple, sweet potatoes, olive oil, and all the spices. Toss to coat.
3. Spread the mixture onto a greased baking sheet and bake for 30 minutes, stirring occasionally.
