Ingredients

-2 large vine-ripened tomatoes
-2 large fresh mozzarella balls
-1/4 cup extra virgin olive oil
-3 cloves garlic, minced
-2 Tbsp Balsamic vinegar
-1/4 tsp kosher salt
-1/4 tsp freshly ground black pepper
-16 to 20 fresh basil leaves
-20 wooden skewers

Instructions

1. Preheat the grill to medium-high heat.

2. Cut the tomatoes and mozzarella into 1-inch pieces and place them in a bowl. Drizzle olive oil over them and toss to coat.

3. In a small bowl, mix together garlic, balsamic vinegar, salt, and pepper.

4. Thread 4 to 5 pieces of tomato and mozzarella onto each skewer, alternating between the two. Place the skewers on the preheated grill and cook for 3 minutes on each side.

5. Drizzle the prepared dressing over the skewers and top with fresh basil leaves. Serve immediately. Enjoy!
