Ingredients
– 4 chicken breasts
– 1 orange, cut into wedges
– 2 carrots, sliced
– 1 red bell pepper, sliced
– 1/4 cup olive oil
– 2 tablespoons balsamic vinegar
– 1 tablespoon Dijon mustard
– 1 teaspoon dried oregano
– 1 teaspoon garlic powder
– Salt and pepper to taste
Instructions
1. Preheat the grill to medium heat.
2. In a medium bowl, mix together olive oil, balsamic vinegar, Dijon mustard, oregano, garlic powder, and salt and pepper.
3. Place the chicken and vegetables on a large plate, and pour the balsamic marinade over them. Toss everything to coat.
