Ingredients
• 2 zucchini, grated
• 2 eggs
• 1/4 cup gluten-free oat flour
• 1/4 cup Parmesan cheese, grated
• 2 tablespoons chives, chopped
• 1 teaspoon garlic powder
• 1 teaspoon dried oregano
• 1 teaspoon dried basil
• Salt and pepper to taste
• 2 tablespoons olive oil
Instructions
Directions:
1. Preheat oven to 350°F.
2. In a large bowl, combine the grated zucchini, eggs, oat flour, Parmesan cheese, chives, garlic powder, oregano, basil, salt and pepper. Mix all the ingredients together.
3. Form the mixture into four patties.
4. Heat the olive oil in a large skillet over medium heat.
