Super Delicious & Gluten-Free Meal Guide, Recipe Post #48: Gluten Free Summer Squash and Sausage Pasta

Being gluten free means following a specific diet where I do my best to avoid foods that contain the protein gluten, like bread, pasta, cakes, and other baked goods. Eating gluten free doesn’t limit me to only a few foods though. There’s plenty of fresh fruits and vegetables, nuts and seeds, dairy, fish and other meats, eggs, legumes, and most gluten free grains. These include quinoa, millet, tapioca, and brown rice. I also have access to hundreds of tasty gluten free options made with these substitutes, which help to make sure I’m getting all of the vitamins and minerals I need. And that’s not all. Cutting out gluten from my diet also reduces inflammation in my body, which is beneficial for my overall health – from helping with digestion and skin issues, to improving energy levels.

Ingredients

-2 tablespoons olive oil -1/2 pound Italian sausage, casings removed -2 cloves garlic, minced -1 small onion, diced -2 cups chopped summer squash (crookneck or zucchini) -1 teaspoon Italian seasoning blend -2 cups gluten free pasta -1/2 cup gluten free chicken broth -1/4 cup fresh basil, loosely chopped -Salt and pepper, to taste -Parmesan cheese, for garnish

Instructions

1. Heat the olive oil in a large skillet over medium heat. Add the sausage, breaking it up with a wooden spoon, until cooked through and lightly golden. 2. Add the garlic, onion and summer squash, stirring to combine. Cook until softened and lightly golden, about 6-8 minutes. 3. Add the Italian seasoning blend and stir. 4. Meanwhile, bring a pot of salted water to a boil and cook the gluten free pasta according to package directions. 5. Once the pasta is cooked, drain the water and add the pasta to the skillet with the sausage mixture. 6. Pour in the chicken broth and gently stir to combine. Cook until the sauce is slightly thickened and the pasta is coated, about 2-3 minutes. 7. Add the fresh basil and season with salt and pepper, to taste. 8. Serve the pasta with a sprinkle of Parmesan cheese and fresh basil, if desired. Enjoy!
