Ingredients
-4 large bell peppers (any color) -1 small onion, diced -1 lb. lean ground beef -1 cup cooked quinoa -1 small can diced tomatoes -1 tsp. garlic powder -1 tsp. dried oregano -1/4 tsp. black pepper -2 tsp. olive oil -1/2 cup shredded cheese (any kind) -salt, to taste
Instructions
1. Preheat oven to 350°F. 2. Slice peppers in half length-wise and remove core and seeds. 3. Place peppers cut side up in a 9×13 inch baking dish. 4. In a large skillet, heat oil over medium-high heat. Add onions and cook until softened, about 4 minutes. 5. Add ground beef and cook until no longer pink, breaking it up with a wooden spoon as it cooks. 6. Drain fat and return to skillet. 7. Add quinoa, tomatoes, garlic powder, oregano, and black pepper. Cook for an additional 3 minutes. 8. Remove from heat and stir in salt, to taste. 9. Fill peppers with beef mixture and top with shredded cheese. 10. Cover dish with foil and bake for 30 minutes. 11. Uncover and bake for an additional 10 minutes until cheese is melted and bubbly. 12. Serve and enjoy!
