Gluten Free Stuffed Bell Peppers

Being gluten free means avoiding any food that has wheat, rye, and barley in it, and instead focusing on foods that are naturally gluten free, like fruits and vegetables, legumes and beans, nuts and seeds, dairy, eggs, meat and fish, and grains and starch like rice, quinoa, and potatoes. There are plenty of other non-gluten containing grains such as buckwheat, amaranth, and millet. The health benefits of being gluten free include improved digestion, balanced energy levels, weight loss, and a happier and healthier you overall. It can help you achieve better nutrition and can even prevent or reduce some symptoms of health conditions such as celiac disease, irritable bowel syndrome, and other serious food allergies. Being gluten free also allows you to eat a variety of foods that are contrary to what many people think; that you need to eliminate all grains from your diet.

Ingredients


– 4 bell peppers (any color) – 1 lb. ground beef – 1/2 cup uncooked white rice – 1/2 yellow onion, finely diced – 2 cloves garlic, minced – 1 can (15 oz) diced tomatoes – 1 teaspoon Italian seasoning – Salt and pepper to taste

Instructions


1. Preheat oven to 375°F. 2. Slice the top off of each bell pepper and remove the seeds and ribs. Place in a 9×13 inch baking dish. 3. In a large bowl, combine the ground beef, rice, onion, garlic, tomatoes, Italian seasoning, salt, and pepper. Spoon the mixture into the bell peppers. 4. Bake in preheated oven for 30 minutes. 5. Serve warm. Enjoy!
