Ingredients
-1/2 lb Ground sausage
-1 Red bell pepper, diced
-1/2 Onion, diced
-2 cloves Garlic, minced
-1/2 tsp Ground cumin
-1/4 tsp Chili powder
-1/4 tsp Smoked paprika
-1/4 tsp Salt
-4 large Eggs
-1/4 cup Cheddar cheese, shredded
-4 Gluten-free tortillas
-1/4 cup Salsa
Instructions
1. In a large skillet over medium-high heat, cook the sausage, bell pepper, and onion until the sausage is browned and the vegetables are tender.
2. Add the garlic and spices and cook for 1 minute, stirring occasionally.
3. Beat the eggs in a bowl and pour into the skillet. Stir until the eggs are cooked through.
4. Reduce the heat to medium-low and stir in the cheese.
5. Place the tortillas on a plate and divide the egg mixture among them. Top each with 2 tablespoons of salsa.
