Gluten-Free Parmesan Chicken and Zucchini Skillet

Going gluten free has become more and more popular over the last few years, and I’m one of the many people who have embraced this lifestyle. Being gluten free means consuming only foods and drinks that don’t contain gluten, the protein found in wheat, barley, and rye. This includes meals made with fruits, vegetables, meats, dairy, grains such as rice and oats, and other naturally gluten-free foods. Eating gluten-free has numerous health benefits, such as increased energy and improved digestion, as well as reducing the risk of developing heart disease, type 2 diabetes, and certain cancers. If you’re looking to switch up your diet, going gluten free is a great way to do it!

Try this as your next healthier meal option to serve up for you and your loved ones:

Ingredients


– 4-6 boneless skinless chicken breasts – 2 tablespoons olive oil – Salt and pepper to taste – 1 teaspoon dried oregano – 1 teaspoon garlic powder – 2 tablespoons finely grated Parmesan cheese – 2 bunches zucchini, sliced – 1/4 cup chicken broth – 2 tablespoons freshly chopped parsley leaves

Instructions


1. Heat the olive oil in a large skillet over medium-high heat. 2. Season the chicken with salt and pepper to taste and oregano and place in the skillet. Cook for 6-8 minutes on each side until golden brown and cooked through. 3. Reduce the heat to low, and sprinkle the chicken with Parmesan cheese. Place the zucchini slices in the skillet around the chicken. 4. Pour in the chicken broth, cover with a lid, and simmer for 8-10 minutes or until the chicken and zucchini are cooked through. 5. Sprinkle with parsley and serve. Enjoy!
