Try this as your next healthier meal option to serve up for you and your loved ones:

Ingredients
-1 cup quinoa
-1 can black beans, rinsed and drained
-1 bell pepper, diced
-1/2 cup frozen corn
-1/2 onion, diced
-2 cloves garlic, minced
-1/2 teaspoon chili powder
-1/2 teaspoon ground cumin
-1/4 teaspoon smoked paprika
-1/4 teaspoon garlic powder
-Salt and pepper
-1/2 cup chunky salsa
-1/4 cup chopped fresh cilantro
-1 tablespoon lime juice
-1/4 cup guacamole
-1/4 cup queso fresco
Instructions
1. Cook quinoa according to package instructions.
2. Heat a large skillet over medium heat. Add bell pepper, corn, onion and garlic. Cook until vegetables are tender, about 5-7 minutes.
3. Stir in chili powder, cumin, smoked paprika, garlic powder, salt and pepper.
4. Add black beans and cooked quinoa to the skillet. Stir to combine, and cook for an additional 2-3 minutes, or until everything is warmed through.
5. To assemble the bowls, divide the quinoa and vegetables between two bowls. Top each bowl with salsa, cilantro, lime juice, guacamole and queso fresco. Serve immediately.
