Being gluten free means eliminating gluten, a protein found in grains, from your diet. Gluten free grains include rice, millet, quinoa, sorghum and amaranth, and there are substitutes for the wheat, barley and rye containing products like hamburger buns, pasta and breakfast cereals. Gluten-free diets are being adopted by some people for health reasons, such as those with celiac disease, gluten sensitivity and wheat allergy. Eating a gluten-free diet can potentially lead to improved digestion, better nutrient absorption, balanced blood glucose levels, improved mood and greater energy. Avoiding gluten-free foods can also reduce inflammation and aid in weight management.

Ingredients


• 2 tablespoons olive oil • 4 boneless, skinless chicken breasts • Salt and freshly ground black pepper • 1/4 cup fresh lemon juice • 2 tablespoons gluten-free Dijon mustard • 1 tablespoon honey • 2 cloves garlic, minced • 1/4 cup fresh parsley, roughly chopped • 1/4 cup fresh basil, roughly chopped

Instructions


1. Heat oil in a large skillet over medium heat. 2. Season chicken with salt and pepper to taste. Add chicken to the skillet and cook until golden brown and cooked through, about 10 minutes per side. 3. In a small bowl, whisk together lemon juice, mustard, honey, garlic, parsley, and basil. 4. Pour sauce over chicken and continue to cook until sauce thickens, about 2 minutes. 5. Serve warm over cooked rice or quinoa. Enjoy!
