For the mango salsa:

– 1 large ripe mango, peeled and diced
– 1 medium red bell pepper, chopped
– 1/2 cup chopped red onion
– 1/4 cup packed fresh cilantro leaves, chopped
– 1 jalapeno, seeded and minced
– 1 large lime, zested and juiced
– Salt to taste

Instructions

1. Preheat your grill to medium-high heat.

2. Season both sides of the chicken breasts with salt and pepper. Brush them lightly with the olive oil.

3. Grill the chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F. Remove from the grill and let them rest.
