Directions: 1. Place chicken cubes in a large bowl, and sprinkle with garlic powder, salt, and pepper. Pour olive oil over the chicken cubes, and mix until evenly coated. 2. In a separate bowl, mix together the red onion, bell pepper, and zucchini. 3. Thread the chicken cubes, red onion, bell pepper, and zucchini onto each of the gluten free skewers, alternating between the ingredients to disperse evenly. 4. Heat a grill to medium-high heat.
