-4 boneless skinless chicken breasts, cut into cubes -2 tablespoons olive oil -1/2 teaspoon garlic powder -Salt and pepper to taste -1 red onion, cut into large chunks -1 bell pepper, cut into large chunks -1 zucchini, cut into large chunks -1 package gluten free skewers


Directions: 1. Place chicken cubes in a large bowl, and sprinkle with garlic powder, salt, and pepper. Pour olive oil over the chicken cubes, and mix until evenly coated. 2. In a separate bowl, mix together the red onion, bell pepper, and zucchini. 3. Thread the chicken cubes, red onion, bell pepper, and zucchini onto each of the gluten free skewers, alternating between the ingredients to disperse evenly. 4. Heat a grill to medium-high heat. Place the kabobs on the grill, and cook for 8-10 minutes, turning kabobs every few minutes to ensure even cooking. 5. Serve the kabobs over a bed of quinoa or your choice of gluten free grains. Enjoy!
