Ingredients


-1 lb. large raw shrimp -3 tablespoons olive oil -1 teaspoon chipotle chili powder -1 teaspoon garlic powder -Juice of 1 lime -2 ears of fresh corn, shucked -1 red, green, and/or yellow bell pepper, seeded and diced -1/2 cup diced red onion -1/2 teaspoon sea salt -Freshly ground black pepper, to taste -1 cup cooked black beans -1/2 cup cooked quinoa -1/2 cup diced fresh tomatoes -1/4 cup crumbled feta cheese -Fresh cilantro, for garnish

Instructions


1. Preheat the oven to 400 degrees F. 2. Place the shrimp in a large bowl and drizzle with the olive oil. Add the chipotle chili powder, garlic powder, and lime juice. Toss to combine. 3. Spread the shrimp in a single layer in a shallow baking dish and bake for 8 minutes. 4. Meanwhile, place the corn, bell pepper, and red onion in a bowl and season with the sea salt and freshly ground black pepper. 5. Divide the corn mixture among four bowls. Top each with cooked beans, quinoa, tomatoes, and feta. 6. Remove the shrimp from the oven and place over the bowls. Garnish with fresh cilantro. Enjoy!
