-1 lb. large raw shrimp -3 tablespoons olive oil -1 teaspoon chipotle chili powder -1 teaspoon garlic powder -Juice of 1 lime -2 ears of fresh corn, shucked -1 red, green, and/or yellow bell pepper, seeded and diced -1/2 cup diced red onion -1/2 teaspoon sea salt -Freshly ground black pepper, to taste -1 cup cooked black beans -1/2 cup cooked quinoa -1/2 cup diced fresh tomatoes -1/4 cup crumbled feta cheese -Fresh cilantro, for garnish
1. Preheat the oven to 400 degrees F. 2. Place the shrimp in a large bowl and drizzle with the olive oil. Add the chipotle chili powder, garlic powder, and lime juice. Toss to combine. 3. Spread the shrimp in a single layer in a shallow baking dish and bake for 8 minutes. 4. Meanwhile, place the corn, bell pepper, and red onion in a bowl and season with the sea salt and freshly ground black pepper. 5. Divide the corn mixture among four bowls.
