Ingredients




– 2 boneless, skinless chicken breasts, sliced into thin strips
– 1 red pepper, sliced
– 1 yellow pepper, sliced
– 1 onion, sliced
– 2 cloves garlic, minced
– 1 cup broccoli florets
– 2 carrots, sliced into thin strips
– 3 tablespoons gluten-free soy sauce (ensure the brand is gluten free)
– 2 tablespoons vegetable oil
– Salt and pepper to taste
– Optional toppings: sesame seeds, green onions


Instructions




1. Heat one tablespoon of oil in a large pan or wok over medium-high heat.
2. Season the chicken strips with salt and pepper and add them to the pan. Cook until they’re no longer pink in the middle, about 4-5 minutes. Once cooked, remove them from the pan and set them aside.
3. Add another tablespoon of oil to the pan. Add the onion and garlic, and sauté them until they’re softened, about 2-3 minutes.
