2 tablespoons extra-virgin olive oil 4 cloves garlic, minced 1 small onion, diced 1 teaspoon dried thyme 1 teaspoon dried oregano 2 cups gluten-free chicken broth 1 lb skinless and boneless chicken breasts, cut into cubes 1/2 cup gluten-free all-purpose flour 2 cups frozen mixed vegetables 1/2 cup heavy cream
Instructions
1. Preheat oven to 375 F. Grease an 8-inch baking dish with cooking spray. 2. Heat the oil in a large skillet over medium heat. Add the garlic, onion, and spices. Cook until the vegetables are tender, about 3-4 minutes. 3. Add the chicken and cook until lightly browned, about 4 minutes. 4. Stir in the gluten-free flour. Slowly whisk in the broth, stirring constantly until the sauce thickens, about 2 minutes. 5. Add the vegetables, stir in the cream and season with salt and pepper.
