2 tablespoons extra-virgin olive oil 4 cloves garlic, minced 1 small onion, diced 1 teaspoon dried thyme 1 teaspoon dried oregano 2 cups gluten-free chicken broth 1 lb skinless and boneless chicken breasts, cut into cubes 1/2 cup gluten-free all-purpose flour 2 cups frozen mixed vegetables 1/2 cup heavy cream


1. Preheat oven to 375 F. Grease an 8-inch baking dish with cooking spray. 2. Heat the oil in a large skillet over medium heat. Add the garlic, onion, and spices. Cook until the vegetables are tender, about 3-4 minutes. 3. Add the chicken and cook until lightly browned, about 4 minutes. 4. Stir in the gluten-free flour. Slowly whisk in the broth, stirring constantly until the sauce thickens, about 2 minutes. 5. Add the vegetables, stir in the cream and season with salt and pepper. Simmer until the vegetables are tender, about 4 minutes. 6. Pour the mixture into the baking dish. Place the prepared top crust over the filling. Cut some steam vents in the top of the dough. 7. Bake until the crust is golden brown and the filling is bubbly, about 25-35 minutes. Let cool for 10 minutes before serving. Enjoy!
