-1 lb boneless, skinless chicken breasts -2 large eggs -1/2 cup gluten-free breadcrumbs -1/4 cup grated Parmesan cheese -1/2 teaspoon garlic powder -1/2 teaspoon Italian seasoning -salt and pepper, to taste -1/2 cup marinara sauce -1/2 cup mozzarella cheese, shredded
1. Preheat oven to 375°F. Grease a 9 x 13-inch baking dish with cooking spray. 2. Place chicken breasts on a cutting board and season with salt, pepper, garlic powder, and Italian seasoning. 3. In a shallow bowl, beat together eggs. In a separate shallow bowl or plate, mix together breadcrumbs and Parmesan cheese. 4.
