Ingredients


-1 lb boneless, skinless chicken breasts -2 large eggs -1/2 cup gluten-free breadcrumbs -1/4 cup grated Parmesan cheese -1/2 teaspoon garlic powder -1/2 teaspoon Italian seasoning -salt and pepper, to taste -1/2 cup marinara sauce -1/2 cup mozzarella cheese, shredded

Instructions


1. Preheat oven to 375°F. Grease a 9 x 13-inch baking dish with cooking spray. 2. Place chicken breasts on a cutting board and season with salt, pepper, garlic powder, and Italian seasoning. 3. In a shallow bowl, beat together eggs. In a separate shallow bowl or plate, mix together breadcrumbs and Parmesan cheese. 4. Dip each chicken breast in the egg mixture, and then coat both sides in the breadcrumb mixture, pressing to adhere. 5. Place chicken breasts in the prepared baking dish. 6. Spread marinara sauce over the top of the chicken. 7. Top chicken with mozzarella cheese. 8. Bake in the preheated oven until chicken is cooked through and cheese is melted and bubbly, 30 to 35 minutes. 9. Serve and enjoy!
