Ingredients


– 2 tablespoons olive oil – 2 boneless skinless chicken breasts, cut into ¼-inch cubes – 2 cloves garlic, minced – 1 teaspoon ground cumin – Salt and pepper – 1 cup cooked quinoa – 1/2 cup black beans, canned – 1/4 cup corn, fresh or frozen – 1/4 cup diced tomatoes – 1/4 cup chopped red onion – 2 tablespoons fresh lime juice – 2 tablespoons chopped fresh cilantro – 2 tablespoons sliced olives – 2 tablespoons salsa – 4 gluten-free flour tortillas, heated

Instructions


1. Heat the olive oil in a large skillet over medium heat. Add chicken and garlic and season with cumin, salt, and pepper. Cook for 5 to 8 minutes, or until chicken is cooked through. 2. In a large bowl, combine cooked quinoa, black beans, corn, tomatoes, red onion, lime juice, cilantro, olives, and salsa. 3. To assemble each burrito bowl, spoon the chicken and quinoa mixture into each of four heated tortillas. Serve warm.
