Being gluten free means eliminating any food or drink that contains the protein gluten, which comes from wheat, barley and rye. Foods that are naturally gluten free include all raw fruits and vegetables, unprocessed dairy products, certain grains (like oats, quinoa, and millet), nuts and legumes. Gluten free substitutes for grains can also be consumed including rice, potato, buckwheat and corn. There are numerous health benefits of a gluten free lifestyle, including improved digestion, decreased bloating and abdominal pain, increased energy levels, and improved overall health. A gluten free diet is typically lower in saturated fat and calories and can allow more whole, unprocessed foods to be incorporated into an individual’s daily diet.

Ingredients


– 4 tablespoons butter – 2 cloves garlic, minced – 2 cups gluten-free chicken broth – 2 cups gluten-free vegetable broth – 2 cups gluten-free cornmeal – 2 cups shredded cheddar cheese – 6 strips cooked bacon, crumbled – Chopped parsley and fresh cracked pepper for garnish

Instructions


1. In a large pot, melt butter over medium heat. Add garlic and cook for 30 seconds. 2. Add chicken broth and vegetable broth and bring to a boil. 3. Gradually add cornmeal, stirring constantly, until you have a thick porridge. 4. Reduce heat to low and cook, stirring frequently, for 15 minutes or until thickened. 5. Remove from heat and stir in cheese and bacon. 6. Divide polenta into 4 bowls and top with parsley and fresh cracked pepper. Serve warm.
