Ingredients
1 head of cauliflower, riced 1 onion, chopped 1 bell pepper, chopped 2 cloves garlic, minced 1/2 teaspoon fresh ginger, grated 3 tablespoons avocado oil (or cooking oil of your choice) 2 large eggs, lightly beaten 3 1/2 tablespoons gluten-free soy sauce 1/4 teaspoon toasted sesame oil 3 green onions, trimmed and thinly sliced
Instructions
1. Heat a large skillet over medium-high heat. 2. Add the avocado oil to the pan. 3. Once the oil is heated, add the onion and bell pepper. Saute for 2-3 minutes. 4. Add the garlic, ginger, and riced cauliflower. Cook for an additional 4-5 minutes, stirring constantly. 5. Push the vegetables to the sides of the pan and pour the eggs into the center. Scramble the eggs until cooked. 6. Add the soy sauce and sesame oil. Stir to combine. 7. Serve the fried rice with green onions and enjoy.
