Going gluten free sounds intimidating at first, but it’s not as hard as it seems. Being gluten free basically means avoiding all types of foods containing gluten, which is a type of protein found in wheat, barley, and rye. That means no breads, pastas, cakes, cereals, crackers, and even some ingredients in processed foods, like certain types of soy sauce. On the plus side, there are some delicious substitutes for all the yummy treats you have to give up. Foods like rice, quinoa, potatoes, lentils, buckwheat, and corn are all gluten-free and definitely still delicious. Plus, there are plenty of health benefits to switching to a gluten-free diet, like reduced bloating, more energy, and improved digestion. It might take some time to adjust to, but going gluten free isn’t so bad!
Try this as your next healthier meal option to serve up for you and your loved ones:
1 head of cauliflower, riced 1 onion, chopped 1 bell pepper, chopped 2 cloves garlic, minced 1/2 teaspoon fresh ginger, grated 3 tablespoons avocado oil (or cooking oil of your choice) 2 large eggs, lightly beaten 3 1/2 tablespoons gluten-free soy sauce 1/4 teaspoon toasted sesame oil 3 green onions, trimmed and thinly sliced
1. Heat a large skillet over medium-high heat. 2. Add the avocado oil to the pan. 3. Once the oil is heated, add the onion and bell pepper. Saute for 2-3 minutes. 4. Add the garlic, ginger, and riced cauliflower. Cook for an additional 4-5 minutes, stirring constantly. 5. Push the vegetables to the sides of the pan and pour the eggs into the center. Scramble the eggs until cooked. 6. Add the soy sauce and sesame oil. Stir to combine. 7. Serve the fried rice with green onions and enjoy.
