Ingredients


• 2 tilapia fillets, thawed • 4 cloves garlic, minced • 2 tablespoons olive oil • juice of 1/2 lemon • 2 tablespoons fresh parsley, chopped • 1/2 teaspoon dried oregano • 1/2 teaspoon red pepper flakes • Salt and pepper to taste For the Roasted Red Pepper Sauce: • 2 tablespoons olive oil • 1/2 red onion, chopped • 2 cloves garlic, minced • 1 red bell pepper, seeded and diced • 2 tablespoons tomato paste • 1/2 teaspoon dried oregano • 1/4 cup white wine • 1/2 cup chicken broth • Salt and pepper to taste

Instructions


1. Preheat oven to 400 F. 2. Place the tilapia fillets onto a greased baking sheet. Sprinkle each fillet with garlic, olive oil, lemon juice, parsley, oregano, and red pepper flakes. Season with salt and pepper. 3. Roast in preheated oven for 15-20 minutes, until cooked through. 4. Meanwhile, heat olive oil in a large skillet over medium-high heat. Add onion and garlic, and cook until softened, about 5 minutes. Add bell pepper and tomato paste, stirring to combine. Cook for an additional 2-3 minutes, stirring occasionally. 5. Add white wine, chicken broth, oregano, salt, and pepper. Bring to a boil, then reduce heat to low and simmer until sauce has thickened, about 15 minutes. 6. To serve, top tilapia fillets with roasted red pepper sauce and additional herbs, as desired. Enjoy!
