Ingredients
2 large sweet potatoes 2 tablespoons olive oil 1 teaspoon cumin 1 teaspoon chili powder 1/4 teaspoon garlic powder 1/4 teaspoon cinnamon 1 teaspoon oregano 1 red bell pepper, chopped 1 green bell pepper, chopped 1 small onion, chopped 1 cup cooked chicken, beef or pork (optional) 1/3 cup salsa 2 tablespoons sour cream or Greek yogurt
Instructions
1. Preheat oven to 400°F. Line a baking sheet with parchment paper. 2. Scrub sweet potatoes and rub with 1 tablespoon oil. Sprinkle with cumin, chili powder, garlic powder and cinnamon. Place potatoes on the baking sheet and bake in preheated oven for 45 minutes to 1 hour, until fork tender. 3. Meanwhile, heat the remaining oil in a large skillet over medium heat. Add bell pepper and onion. Saute for 5 minutes, until vegetables are tender. 4. Add cooked chicken, beef or pork (if using) to the skillet and cook until heated through. Stir in salsa. 5. When potatoes are done baking, remove from the oven. Cut a slit in the center of each potato and spoon the fajita filling into the slits. 6. Top with a dollop of sour cream or Greek yogurt. Enjoy!
