Ingredients
-2 boneless, skinless chicken breasts
-1/4 cup coconut milk
-1 tablespoon olive oil
-Juice of 1 lime
-1 teaspoon garlic powder
-1 teaspoon ground ginger
-1 teaspoon black pepper
-1 teaspoon dried cilantro
-1/4 teaspoon cayenne pepper
-1/4 teaspoon salt
Instructions
1. Preheat the oven to 375 degrees F.
2. Place the chicken breasts on a cutting board and season with salt and pepper on both sides.
3. In a large bowl, mix together the coconut milk, olive oil, lime juice, garlic powder, ground ginger, black pepper, dried cilantro, cayenne pepper, and salt.
4. Dip each side of the chicken breasts into the coconut marinade, covering the chicken completely.
